After indulging for over a week, we finally decided it was time to try to eat healthy again. I used the marinade of this recipe for the chicken and added it to a pita with hummus, spinach, mixed greens, tomatoes, and avocados. The marinade was delicious and it went well with the veggies and hummus.
We had a lot of extra chicken so that’s why it’s spilling over the edge of my pita. It made for some leftovers the next day with the extra veggies, pitas, and hummus we have. This dish was such a great idea! I thank my friend for Instagraming his version of this, which inspired me to make this.
I’m starting a new section called Cooking Diary to document all the recipes we find online. I’m no cook and don’t know how to make anything worth eating unless I follow a recipe. Therefore, I will be posting my experiences with cooking! I’ve mentioned different recipes we’ve tried within other posts, but I’m going to start doing separate posts for cooking. We’ve been trying to cook more and sometimes we’re really good at cooking each day and sometimes (like the past week) we’re really bad at it! This will hopefully give us more motivation to try to cook more and find new recipes. Enjoy! :)
I hope everyone had a great Mother’s Day! I’m so happy I was able to spend two days with my parents. Since I’m away at college and almost about to move, I get really excited to spend some time with my parents. I spend my Mother’s Day weekend at Universal Studios and at my grandma’s house. I haven’t been there since I was little, so I only remembered bits and pieces from the park. My dad was able to get discounted tickets because of an event, so we were able to stay pass the closing time for the general public. It didn’t really make a difference, because the lines weren’t any shorter than during the day.
Mark also came with us and it was his first time there. He didn’t know what to expect on any of the rides, but he was super excited. He thought the Waterworld show would have dolphins and whales (silly boy). That is such an awesome show, by the way. It’s amazing how they do all the stunts during the show.
The studio tour is one of my favorite rides there. I love being able to see where they filmed all these movies and get to see how they use certain areas to make it look real in the movies. You don’t expect the tour to be as long as it is, but the lot is HUGE! It takes about an hour to go through the whole thing so go to the bathroom before you wait in line. I’ve also really liked the Jurassic Park ride, I think it’s mainly because of the drop at the end. It’s so exhilarating. I think another great ride is the Transformers ride, because it’s so different from any other rides in the area. It’s really similar to the Spiderman ride in Islands of Adventure in Orlando. So if you’ve been on either of those rides, then you’ll know what to expect.
Also over the weekend, Mark and I usually have more time to cook and try out new recipes. For the past couple weeks, Mark has been craving a teriyaki bowl. We went to go get one, but he still wanted more teriyaki. He found a recipe online to make gyudon (beef teriyaki) so we decided to make it for dinner that night.

I’m trying to make every weekend count, since I technically haven’t graduated (graduation is in June). I still live near school, participate in my club, and all my friends are still in school (hehe). On top of that I have a part time job and an internship. This past week, I’ve just felt like I’m ditching school. I don’t think it’s really hit me yet that I’m done.
This weekend, I went to the mall and I was determined to buy something. Usually when I say that, I never buy anything, but I did! I guess with a store as big as Forever 21, you’re bound to find something. I’m happy with my purchases, but there are still so many things I want to buy. I’m in the process of doing a wardrobe change.
On Saturday, I baked these cake bars and they are so delicious. Mark is in love with them. As soon as I came across this recipe and the pictures, I was drooling. I bookmarked the recipe in my “recipes to try” folder and finally had the time to make them. Yes, my pictures are terrible in comparison to Averie’s pictures, but the cake bars turned out as delicious as her pictures show though! I’m no cook, so anything I make will probably not look pretty. (If you go back to some of my first posts… haha it’s pretty funny!)
One of my post grad goals is to cook more and so far, it’s been going pretty well. We still go out a lot though, because we get really lazy to go grocery shopping and cook. At least we’re trying! On Saturday we made fish with mango salsa. It’s so quick and easy to make, yet healthy and delicious.
I must say, it was a pretty eventful and productive weekend! Well, this is my definition of an eventful and productive weekend. I was supposed to exercise, buuuuuut I will exercise next week. Next weekend, we’re going with my roommate to San Diego. I’m really excited since I haven’t been there in a really long time.
